Hibiscus Crumb Muffins

or expected unexpected pivoting.

1/2 cup of dried hibiscus flowers

1/2 cup of powdered hibiscus flowers (you can purchase this or use a blender to make your own)

1/2 cup of soften butter

1 cup sugar

2 eggs

2 teaspoons vanilla extract

2 cups of flour

1/2 teaspoon salt

2 teaspoons baking powder

1/2 cup of milk

Zest and juice from half lemon

For crumb topping:

1/2 cup of flour

1/3 cup of sugar or brown sugar

4/6 tablespoons salted butter

Preheat the over to 375

Add the 1/2 cup of milk and 1/2 cup of hibiscus flowers to a saucepan and put on a low heat. First sight of boiling, remove from heat. Let cool and strain milk. Set aside.

Cream the butter and sugar until light and fluffy. Then add the eggs, one at a time, beating until well combined. Add in the vanilla.

Whisk together the flour, salt, powdered hibiscus, and baking powder. Add the lemon juice and zest to the milk. Add the flour and milk mixtures into the butter and sugar mixture.

Line a 12 cup standard muffin tine with cupcake lines and fill with batter. Be mindful not to overfill.

Let sit while you make the crumb mixture.

Crumb mixture

Combine the flour, sugar and butter using a fork or your hands until you get mini to medium size balls. Add to the top of the muffins.

Bake at 375 for 30-35 minutes.

Serve with a coffee or milk tea.

Expected unexpected pivoting looks like a lay-off. And while I expected it to happen (cough cough points to all the 100000000000 layoffs that has happened), it was still unexpected and a bit ill timing. But I guess anytime would be ill timing.

However, all things happen for a reason and pivoting looks like the following for my family:

  • More home cooked meals

  • Spending more time outdoor with the kids

  • Earlier mornings for prayer and better start of day

  • Business focus as this is now a full time job

Pivoting be it intentional or unintentional can be a good thing. It can also be hard and sometime very hard. But it is something that happens and we are blessed and fortunate enough to have the business but also a very strong support system.
